Sauces made from fruits, berries or mixtures (fruit and berry sauces), depending on the spices and seasonings included in their composition, are prepared for both desserts and meat dishes. A sweet fruit and berry sauce with cinnamon, nutmeg and vanilla is, for example, suitable for ice cream, cheesecakes, pancakes, puddings and stews. The same sauces can be served with chicken or turkey. Spicy berry sauces are prepared for meat and game. In their composition, puree, whole berries or pieces of fruit and spicy spices are harmoniously balanced.
For a sauce recipe you need:
- kornved – 500g
- fresh mint – 10 leaves
- green basil – 10 leaves
- coriander (ground) – 1.5 tsp
- chili pepper (ground) – 1/2 tsp
- garlic – 2-3 cloves
- coriander – 2-3 branches
- vinegar – 1 tbsp.
- vegetable oil – 1-2 tablespoons
- sugar – to taste
- salt to taste.
Sort the dogwood, throw away spoiled berries and put in a colander. Rinse under running water and drain off excess liquid.
Put the washed berries in a saucepan with a little boiling water and cook on very low heat until the berries are soft. It takes about 10 minutes.
Prepare the spicy barley sauce mixture. To do this, put the leaves of mint, coriander and green basil in a mixing bowl, add ground coriander, hot red pepper, pour in vegetable oil and apple cider vinegar, add salt and sugar. Grind until smooth.
Put the berries on a sieve, let them cool slightly and remove all the seeds.
Punch the cornelian meat with an immersion mixer to obtain a homogeneous mass.
Transfer the hot spicy spice to the dogwood mass, stir and return to the heat. Boil, stirring occasionally for about 10 minutes. Dogwood sauce for the winter is ready. Put it in prepared, sterilized small jars, roll up with cooked lids and store in a cool place.
