Cucumber rolls with curd cheese

A quick recipe for a simple snack that can be prepared for a holiday or for a daily lunch. The cucumber is easy to cut into thin slices with a peeler and then dry on paper towels. If desired, you can use curd for the filling, mixed to taste with fresh herbs and spices.

For the recipe you need:

  • cucumbers (small) – 2 pcs.
  • salt – 1/2 tsp
  • curd mass – about 150 g
  • green (fresh) – to taste
  • garlic – 1 clove
  • ground black pepper – to taste.


Wash small cucumbers, wipe with a paper towel and cut into very thin longitudinal strips. It is convenient to cut cucumbers with a standard vegetable peeler.

Cover the cutting board with a paper towel, place the sliced ​​cucumbers on it and sprinkle with salt to give juice. Let stand for about 10 minutes. Then dry the cucumbers with paper towels.

For filling, wash and dry fresh herbs, finely chop and mix with curd. Add the garlic that is passed through a press. Season with salt and pepper and mix well again. Place curd with herbs on the edge of the cucumber strips with a teaspoon.

Roll up the cucumber rolls and secure if necessary with wooden toothpicks. Serve cucumber rolls with curd immediately.
