Almond cake with honey


For a cake recipe you need:

  • darling – 250g
  • flour – 250g
  • almonds – 100g
  • icing sugar – 100g
  • eggs – 6
  • milk – 1/2 cup
  • baking powder – 1/2 tsp. 
  • lemon peel and mouth cinnamon – to taste 
for chocolate cream ::
  • darling – 80g
  • butter – 200 g
  • eggs – 2 pcs.
  • granulated sugar – 150g
  • cocoa – 30g
  • rum – 1 tbsp. l. 
for egg yolk glaze ::
  • egg yolk – 2 pcs.
  • icing sugar – 100g
  • granulated sugar – 100 g
  • water – 2 tbsp. the vagina.

To prepare almond cake with honey, you need …


Mix honey thoroughly with egg yolks, milk, peeled and crushed almonds, cinnamon and lemon zest until the mixture thickens and turns white. Beat the whites separately in a strong and persistent foam; Mix flour with baking powder. Add flour and proteins in small portions to the prepared honey mass, stirring alternately until a homogeneous soft dough is obtained.

Cut the cakes of the desired shape from the dough, bake on a sheet floured with flour, cool, let stand for a day. Grease the cakes with cocoa cream, cover the top of the cake with egg yolk icing and apply with a cornet decoration made of the same cream with which the cake is stored.

Cooking chocolate cream. Mix eggs, sugar, rum and cocoa, put in a steam bath until thicker. Then remove the mass, let it cool, add butter, rub with honey, mix thoroughly and cool.

Prepare egg yolk icing. Whisk the egg yolks with icing sugar until frothy. Separately from powdered sugar and water, boil a thick syrup to the test “on a string”. Remove the syrup from the heat, allow it to cool slightly, gradually add a thin stream to the whipped egg yolk foam, stirring well until the mass cools. Use the glaze immediately.
